Easy fried rice

A simple yet delicious fried rice with egg and bacon recipe.

The dish is very versatile, you can mix it up with most meat and vegetables. In this one I have just used what was on me at the time (bacon, eggs, shallots and corn).

Fried rice can be made with most rices but I think it goes best with a long grain rice, my personal favourite to use is basmati.

Easy fried rice

Ingredients:

  • Basmati rice – 3 cups (24 fl oz.)
  • Shortcut bacon – 300g (10 fl oz.)
  • 6 large eggs
  • 3 shallots
  • Corn kernels – 1 cup (10 fl oz.)
  • Chicken stock powder – 1 tbsp
  • Soy sauce – 2 tbsp
  • Oil – 1 tbsp

Step 1: Cook rice in a rice cooker or microwave (directions for the microwave can vary depending on the rice, see packaging for instructions)

Step 2: While rice is cooking, add oil to a large fry pan on a medium heat. Dice bacon and add to fry pan until light brown.

Step 3: Remove bacon from fry pan and place on paper towels, then turn fry pan down to a low to medium heat. Lightly whisk the eggs in a bowl and add to fry pan, making sure it covers the whole base of the pan. Cover and let sit for 5 -10 minutes or until it looks cooked. Use a plastic spatula (or other plastic utensil) to slice the eggs into small squares, then flip and stir the eggs around.

Step 4: Add bacon, chicken stock, soy sauce, shallots, corn and rice (basically everything!). Mix and enjoy!
