This is an easy rice pudding recipe. Rice pudding is one of my favourite desserts and is so simple to make. It works with any rice you have at home, as well as milk, sugar, vanilla essence, butter and eggs. If you want to make rice pudding from cooked rice just half the milk in this recipe.
How to make rice pudding
Prep: 2 mins. Cook: 30-45 mins. Serves: 4
- Rice (uncooked) – 1 cup (8 oz.)
- Milk – 4 cups (32 oz.)
- Sugar – 60g (2 oz.)
- Vanilla essence – 1 and 1/2 tablespoons
- Butter- 2 tbsp
- 2 egg yolks
Step 1: Heat stove to a medium heat. Add milk and rice to a saucepan and place on stove. Stir until rice is cooked and milk is a thick creamy texture (add more milk if rice isn’t cooked enough).
Step 2: Add sugar, vanilla essence and butter. Stir to combine.
Step 3: Take saucepan off heat and let sit for a couple minutes. Add yolks whilst stirring vigorously, making sure the yolk is completely mixed in. Serve and enjoy.
